A Personal Culinary Journey

Pour comprendre ma cuisine il faut tout d’abord voyager dans mon enfance. Ceci est le rêve d’une vie, devenir cheffe, j’en rêvais déjà enfant comme d’autres filles s’imaginent styliste ou journaliste . It was with my grandmother that I was introduced to this passion for cooking, to the pleasures of the flesh, to the warmth of the large convivial tables we shared as a family...
Today, after several years of training in France and Switzerland and stints in prestigious establishments, I finally have the opportunity to give free rein to my personality in a cuisine that is expressive, sensitive and delicate. The challenge I've set myself is to reinvent the art of African cooking, to give it back its letters of nobility by integrating it into the world of haute gastronomy.

WHAT IS AFRICANISANT?
L'Africanisant in my cooking is the harmonious marriage of French gastronomy and my African roots. The result of this cultural mix, my cuisine is a rich, colorful palette imbued with passion. Each dish I create tells a story, my own - that of a chef's daughter turned chef, determined to highlight her African origins.
Through my Africanizing, I revisit the traditional dishes that shaped my childhood, reinventing the flavors and products of my native Africa with a contemporary twist.
After working in Michelin-starred, bistronomic and traditional establishments, I spent a long time searching for my culinary identity, my signature. It's within my cultural roots, steeped in gastronomic riches, that I've found my place. By fusing the dishes I enjoy with modern techniques and dressings, I've forged my own identity, a cocoon that I can share without reservation.
My dishes are my stories, where I put passion and love into every creation. Join me on a culinary journey to Africa - an experience where you can discover and savour the essence of my origins.

EGG
Eggs play a fundamental role in my career as a private chef. It's an essential part of every menu, whether perfectly prepared as an omelette, fried or poached. I particularly enjoy sublimating this ingredient by combining it with unique products such as yam or beet. This alchemy gives rise to exceptional and delightful dishes, offering a memorable culinary experience.

Pigeon, that small game bird, has strangely captivated my inspiration. Despite its small size, its exceptional taste has made it one of my culinary passions. It's a great pleasure for me to offer and introduce this poultry. Its tender, fine flesh makes it a deliciously melt-in-the-mouth meat. Whether cooked in a casserole or at low temperature, such as thighs confit with garlic and herbs, I present it in my favorite cuisine, which I call #classicismecuisine.

Vegetables have become one of my signature dishes, with my jardinière of seasonal vegetables. Whether they're at the heart of an African-influenced menu or a numbered menu, I highlight the uniqueness of each one. Introducing you to little-known vegetables is a daily mission for me as a home chef, an opportunity to help you cook these everyday products in a different way.

My cooking is a stroke of elegance, a zest of femininity. Refined and minimalist, my cuisine is no less gourmet and passionate. Airy and flavorful, it takes you away with me in a cocoon of subtle, delicate flavors. Quality ingredients sourced from handpicked producers and meticulously prepared; a bold, creative approach to food preparation; artful presentation with an eye for detail and an unquenchable quest for aesthetic appeal; and always a little more delight in every bite... There's nothing I approach without this finesse, exacerbated by my femininity.
